The lighter honey seal adds just a whisper of sweetness without masking the origin character. This is coffee for people who want to taste where their beans grew.

The Philosophy
Most fire-roasted coffees are dark โ the smoke overwhelms delicate flavors. Morning Light is our answer to that assumption. By using a lower, more controlled flame and pulling the beans at first crack, we preserve the bright acidity and floral notes while still imparting a subtle smokiness that adds depth without domination. It took us over 40 test batches to find this balance.
Origin & Terroir
These beans come from a women-owned cooperative in the Yirgacheffe region of Ethiopia โ one of coffee's most celebrated origins. Grown at 2,000+ meters elevation, the beans develop slowly, concentrating sugars and producing the complex floral and citrus notes that Yirgacheffe is famous for. The washed process keeps the cup clean and transparent, letting every nuance of terroir shine through.
The Honey Seal Difference
For Morning Light, we use a lighter application of wildflower honey (rather than the raw Ozark honey in our Original or the buckwheat in Dark Grove). The wildflower honey has a more delicate flavor profile that complements rather than competes with the bean's natural brightness. It's applied at a lower temperature, creating a thinner seal that preserves freshness while keeping the cup character light and clean.
How to Brew
Morning Light is at its absolute best as a pour-over โ the V60 or Chemex will highlight every floral note. Use water at 195-200ยฐF (slightly cooler than darker roasts) and a medium-fine grind. A 1:16 ratio with a 3:30 total brew time produces a cup that's bright, sweet, and complex. Also exceptional as an iced pour-over in summer โ brew directly over ice for a refreshing, tea-like clarity.

How to Brew
Measure
Use 2 tablespoons (14g) per 6oz of water. Adjust to taste.
Heat
Bring water to 200ยฐF (just off boil). Too hot burns the honey seal.
Brew
Pour slowly, let bloom 30 seconds. Total brew time: 3-4 minutes.
Enjoy
