So what exactly does it mean?
The answer begins immediately after the roasting process.
Why Coffee Is Quenched
When coffee comes out of the roaster, it doesn’t stop roasting immediately. The beans retain an incredible amount of heat, and without intervention they continue to cook internally—a process known as carry-over roasting.
This can push a carefully developed roast darker than intended, masking the natural character of the coffee.
To prevent this, we quench our beans immediately after roasting. By rapidly cooling them, we stop the roasting process exactly where we want it, preserving the unique flavors that each origin has to offer.
Preserving Natural Sweetness
One of the greatest advantages of quenching is that it helps preserve the coffee’s natural sweetness.
Coffee contains naturally occurring sugars, including sucrose, that begin breaking down as roasting progresses. By stopping the roast at precisely the right moment, we preserve more of those sugars, allowing the coffee’s own sweetness and delicate floral notes to remain present in the cup.
Our goal isn’t to overpower the bean—it’s to let its natural character shine.
Fresher Coffee, Faster
Freshly roasted coffee naturally releases carbon dioxide for several days after roasting. This “resting period” is important before coffee reaches its peak flavor.
Our quenching process accelerates this release of CO₂, allowing the beans to stabilize more quickly. That means we can package and ship our coffee sooner while still providing the quality we expect.
For our customers, that simply means fresher coffee arrives at your door sooner.
